Heck yeah. A week forecast of 60’s and 70’s and an (almost) COMPLETED PATIO!?! Let’s take full advantage in the kitchen. Lots of healthy, lighter, grilled recipes will be going down this week. Let’s do this.
On Sunday we’ve got an evening baseball game, like won’t be home until 7:30. These crock pot Italian beef sandwiches will be simmering away all day and ready when we are. Huge bonus that all boys, including baseball studs, gobble them up.
I didn’t get a chance to make this green goddess pasta last week, so it’s going on our table Monday night. Love that it features so many fresh spring vegetables.
Caprese chicken. A classic. Sounds great for the grill on Tuesday night. Crusty warm bread on the side.
Grilled skirt steak. Grilled veggies. Grilled tortillas. Homemade guac. You can’t beat this recipe for a Wednesday night.
That brings us to Thursday and a vegetarian dish sounds pretty darn good. Well, vegetarian for me, at least. This his & hers pizza keeps everyone in the family happy. Woo. Hoo.
And we’re at Friday. Some form of date night out, whether it’s adult or family, sounds pretty great to begin Mother’s Day weekend!

I need to pin that pasta dish as Hannah doesn’t like red sauce in her pasta, and it’s such a quick week night dinner. Question – did you end up adding Italian sausage to your Italian beefs to make them a combo?! 😀
