Alright everyone it’s Sunday. I have a weather forecast full of sun and Curtis Stone’s cookbook to continue to work my way through. Let’s do this!
Tonight we are grilling, no doubt. I’m thinking of keeping it simple – some marinated chicken with this delicious and healthy whole wheat orzo pasta salad. My sister Talia loves broccoli and I love her. I hope I can get a bowl her way.
Let’s do a burger Monday night and let’s keep it healthy. This one rocks, and I found a to. die. for. secret. Want to hear? Add in roasted red peppers! Kicks up the flavor and keeps the burger incredibly moist. Hand cut sweet potato fries spiced with cinnamon on the side.
Tuesday night brings about a need for a Mexican flair. Curtis Stone didn’t let me down last week – 3 out of 3 of his recipes were killer so let’s give his chipotle pork tacos a go this week. I have high expectations, no doubt. Homemade guacamole on the side because I’m pretty sure it’s a crime to serve tacos without guacamole.
Let’s bring it back inside for a night just incase things run late in the office. I like to keep my recipe plan flexible that way – from time to time I do switch up the rotation depending on schedules and/or weather. Anyway, have you made this one ? My goodness I don’t know why I haven’t written about it yet. What is my problem?

Let’s round out the week with leaving Friday open. Perhaps I’ll hope for a date night. If it’s not in the cards, maybe I’ll pick up some filets.
