Well, we reached a temperature today of over 65 degrees and the sun was actually out (!!!) so you know what that means – fire up the grill! I had some boneless chicken breasts just waiting to be infused with flavor and there is no better way to do that than with my go to marinade.
This comes from Ina and it is perfect. I made it for the first time when we were visiting M’s grandparents in FL and every time I whisk it together it reminds me of that, which I love. It comes together easily, includes ingredients you almost always have on hand, and really gets into the chicken flavor wise. I often find some marinades just ‘sit’ on top of the chicken. This one changes the flavor, from the inside out.
Let’s hope this weather sticks!
- 1/3 cup olive oil
- zest of 2 lemons
- juice of 2 lemons
- 2 cloves garlic, minced
- tsp kosher salt
- freshly ground black pepper
- hefty TBS freshly minced rosemary
- Whisk all of the above and pour over your chicken and let it hang out few at least a few hours, better overnight.
Tastes like summer, right?
