I am so excited for another new series at ALFS! Whew, there have been a lot of changes around here and I’m loving it! The new look has received wonderful feedback and the motherhood series is rocking, so let’s keep things moving along here. Thank you all for your support! I can’t tell you what it means to me to have this blog as a creative outlet.
Next up? Dinner: Impossible. Let’s do this.
Look, lately I can’t tell you how many friends and readers over lunch (Kelly) or on the phone (Catherine) or on Facebook (Mary Kate) have expressed their frustration with the never ending task of what to get on the table for dinner. And while there is plenty of material out there to help, these rockstar moms don’t have the time to do the research, read the blogs, or buy the books.
Enter Coach C.
I am here for you. But you’re going to have to trust me. And possibly do a thing or two outside of your normal routine. It will only lead to good things, I promise!
The first task I am going to assign? Time.
Yep.
You need to sit down and give yourself 20 straight minutes (preferably alone) to actually think about dinner for the week. Make a grocery list or two; plan out a few meals. Organize your thoughts for the kitchen for the week.
Because while thinking about dinner on a random Tuesday at 4PM is overwhelming, sitting down alone on a Sunday and organizing some ideas is not. There isn’t that pressure of “omg I need to get to the store but I also have to swing by dance class and I seriously have no idea what to make, omg I give up let’s grab Jimmy Johns.”
On Sunday you still have time.
Think about it this way: those kids you are driving around to activities and sports all the time. what would happen if they never practiced? Didn’t know the plays? Disaster, right. Tweak the way you think about dinner. It’s something you need to plan, practice, prepare for, just like your hard working kids are doing, and it’s going to be a lot easier if you give yourself that time.
Seriously. 20 minutes. Alone.

Alright, now that we’ve got you some stylish paper for inspiration, let’s get you a few meal ideas to get started. Some of my go to quick cooking favs are as follows:
- Chicken tostadas highlight my deepest darkest secret of pulled chicken + olive oil + cilantro + lime + salt & pepper = great things.
- Lasagna you can begin at 6PM? Music to my ears.
- Busy chicken. The name says it all.
- I timed myself. These enchiladas came together in 10 minutes and 15 seconds. No. joke.
- Two ingredient pasta? Yes please. M always go nuts over this one!
