This weekend was just too much fun. I kept telling myself, while deep in the polar vortex, that when the weather changed everything would be different. And oh how it was. Baseball practice, lemonade stands, visit from friends, bbq with neighbors, late night football – and that was just Saturday. And of course, hippity hop, happy Easter to you! I hope everyone is nice and full with too much ham and cheese potatoes. We had a feast cooked by my mom, and it was perfection as always.
As for our line up for the week – hello! We have an upcoming week of mostly 60ish degree temps, yippee! Let’s keep things light and on the grill. Have to balance out that Easter brunch.
Sunday night we probably don’t really need to eat all that much aside from a snack or two. And of course there are leftovers, as my mom is always kind enough to share.
I can’t get enough of this chicken, so on the grill it goes Monday night along with some fresh asparagus. Brown rice will sit nicely underneath.
Chipotle marinaded pork shoulder tacos sound like perfection for a Tuesday night. Fresh pico de gallo on the side.
All alone again as M is off to Boston, I think. I lose track. I’m obsessed with the salmon burgers at Heinen’s. M wouldn’t touch one with a 10 ft pole, so it’s perfect for when he is away. Grilled mexican street corn on the side sounds divine. (recipe to come – stay tuned!)
Let’s bring it in the home on Thursday. This agave soy baked chicken will be bubbling away in my oven. Crisp sugar snap peas will go along with it.
Filets on the green egg sound like the perfect way to end the week. These heavenly potatoes and roasted green beans on the side.

Glad you had a great Easter! I actually went shopping just for Easter stuff on Friday and meal planned as I was shopping – yet I didn’t really write anything down – I know I am making Company Salisbury Steak for sure – so easy and delish!
