Breathtaking, right?
Ok. Back to reality.
There is a lot going on in our household this upcoming week. We have dinner over at my in-laws, a cooking class, business travel schedules and the most exciting event – a ski trip to Big Sky, MT for M and L! So cool. For them. I will join in the summer as I don’t do winter activities and I have the bebe.
That all being said, I still have a few nights to get some cooking in. Whew!
Monday night I’ll be cooking up homemade stromboli. M buys it for lunch in the city so often, I hope I can do it justice.
Tuesday will be a vegetable chowder. The perfect balance of healthy and hearty!
Wednesday, in honor of Big Sky, I’ll be serving up these bison burgers. Afraid to try bison? Don’t be. It’s delicious and surprisingly quite healthy. It’s lower in saturated fat than regular beef. You won’t find a menu in Montana without it. And let’s be honest, it’s not often you see a fat cowboy. Yee haw!
So, that’s it for this week. The vegetable chowder will last for another dinner for myself and a lunch or two. That’s the best part about soup, isn’t it? It stretches! And I suppose I will give myself a night off or two while the crew is away. Not messing up my kitchen is always a plus.

We love bison – that recipe sounds amazing, let me know how they turn out!!
I tried bison this summer in South Dakota and loved it! I seemed so much juicer than beef. This is a soup week for us too! I made split pea soup overnight in the crock-pot. So excited about! And trying my hand at black bean soup tomorrow when I am home to smell it! 🙂
