Here’s what will be cooking in my kitchen this upcoming week.
Sunday is my typical soup day, but, we are off to celebrate Aunt Becky’s birthday! Do you remember her? You’ve met her before here. And here she is with B. Hello adorable. B’s not too bad either.
So that brings us to Monday. When the cat’s away the mouse will…eat whatever she wants. With some possible upcoming FL time coming up I can’t help but swimsuit shop. With this one in my shopping cart (cute right?) this recipe will be just the metabolism boost I need for a few nights. Bonus that it’s delicious.
Wednesday we’ll enjoy chicken parm meatballs. Yum. These green beans will sit along the side.
Thursday will be a steak fajita casserole. What a fun twist on typical fajitas. I will keep you posted.
Friday is our standard pizza night but we’re going to take a night off and enjoy pasta laced with melted Brie. What a combo. Of course I will add some italian sausage for M so he doesn’t get cranky.

Hey Courtney! It’s been a rough day, we had to put our dog down today – I literally just walked by his water dish and thought “he’s out of water!” 🙁
The Dominick’s in Fox River Grove has three different 50% off bins – one by cheese, one by meat and one by the bacon/sausage section.
Since it’s on my way home, three times a week I’ll stop and stock up on meat and cheese – its just by the sell by date, so I just freeze it for later.
I am so incredibly sorry to hear about your dog, that is quite sad.

We are preparing for a big snow storm so made this soup tonight. Added a few things (cannelloni beans, barley, and corn) and substitued chard for the celery. Delicious nonetheless!
