Now this is summer. In all it’s glory. A bunch of chopped up raw veggies, some fresh herbs, feta, salt & pepper to season and that’s it. Yep, no need to even make a dressing because the produce is just. so. good. right now. Why cover it up?
I made this the day we arrived home from a week long trip in South Carolina and to be honest, the whole process could not have felt more welcoming. Chopping up beautiful produce barefoot in the kitchen, B in the backyard hitting baseballs, L running around with a buddy, Sam Hunt playing in the background. It all felt so easy. So summer. So home.
This raw summer salad makes a big batch so get one going today and have a perfect side or quick lunch (it’s delicious over greens) all week. Pairs awesome with a rotisserie chicken as well which is exactly the way we enjoyed it.
Raw Summer Salad
Recipe from Shauna Neiquist
Ingredients:
7 ears of corn, cut off the cob
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
2 seedless cucumbers, chopped
handful mini heriloom or cherry tomatoes, halved
handful basil, chopped up
handful dill, chopped up
crumbled up feta
salt & pepper
Directions:
Prep all ingredients and toss together in a large bowl. Let sit for a few hours for the flavors to develop. Enjoy!
