Oh my GOSH. Friends. It just doesn’t get any better than this BBQ chicken quinoa salad.
It’s SO healthy (perhaps needed after Super Bowl Sunday?) and so beautiful and SO easy. This would be an excellent dish to prep for easy lunches during the week at home or work. It’s a recipe that can stretch and it stays good for a solid few days in the refrigerator. I ate mine for three and didn’t tire of it, at all.
Let’s chat short cuts here, because they rock my socks. A rotisserie chicken pulled apart, doesn’t get any easier than that. Store bought BBQ sauce. Done. And microwavable quinoa packages from Trader Joes? You have no excuses not to try this recipe right now!
All that’s left is to open a can of black beans (we can all handle this I promise us), slice up some green onions, corn, and buttery avocado and get it all mixed together in a big bowl. I piled extra cilantro on top of mine along with some pepper jack cheese because I need cheese in my life daily and I love the kick that pepper jack gives.
Not convinced quite yet? Well gosh I don’t know what else to say. I must be losing my touch. 😉
BBQ CHICKEN QUINOA SALAD
Recipe adapted What’s Gaby Cooking
Ingredients:
1 1/2 cups cooked quinoa (I just used one Trader Joes frozen packets)
1/2 cup fresh corn, cut from the cob (if not in season you can use frozen or canned, totally fine!)
1 (15 oz) can black beans, rinsed and drained
2 cups shredded BBQ chicken (can use a store bought rotisserie chicken and toss with a little BBQ sauce)
1 avocado, chopped
Handful pepperjack cheese
BBQ sauce
2 scallions, chopped
cilantro for garnish
Directions:
In a large bowl, gently toss together the quinoa, corn, black beans, chicken and avocado. Season with salt and pepper. Top with shredded cheese, BBQ sauce, scallions and cilantro.
