Do you meal plan? I’m a big believer in it. I have sat down every saturday for years and planned out what I would be serving for the week. It saves time, money, energy, headaches, and 5PM anxiety over what to make for dinner.
So I want to share what I’ll be cooking in our household weekly. I sit down and do it anyways, thought it might be helpful to pass on. Check it out to see if anything looks good for you. I’d love to hear what you have on the agenda!
Today looks snowy and chilly. Perfect for a time consuming minestrone, which looks out of this world. Look at those colors!
A one tray bake looks incredible for the dreaded Monday – something for everyone. Don’t like tomatoes? There are olives. Hate olives? Hello pancetta. Everyone likes pancetta.
Tuesday’s are perfect for a quick cooking meal for us. T-ball tacos work great and M can’t get enough of them.
We are tied up Friday for dinner which is our typical wingless buffalo chicken pizza night so I’ll be whipping that up Wednesday. If you haven’t tried this recipe yet…what are you waiting for?
Thursday will be some of that leftover minestrone. With a recipe that takes a lot of time, it’s great to get two meals out of it. I’ll be sure to freshen it up with the best bread I can find, good olive oil, and of course shaved parmesan.
Weekend plans keep us busy Friday and Saturday – which brings us right back to Sunday. We can’t forget baked goodies though – I will probably whip up a batch of these at some point (i.e. when B graces me with a long nap).

I would hardly say you struggle! But glad you found some good ideas.
I wish I could do that, but this week I do have some things planned. Making black-eyed pea soup w/Indian spices tonight for dinner tomorrow (meatless Monday) and we have leftover fish which will be fish tacos for tuesday. Weds. is quick beef ragu w/spaghetti squash (will do that i the a.m.)
This all sounds lovely, I’ve been looking for a good fish taco recipe! Let me know how it goes.
