B always has good intentions of starting off in the cart but somehow always works his way onto my hip. That’s OK – I view grocery shopping as a work out.
Alright! Time for the kitchen line up for the week.
I needed to get out my daily routine of ordering Jimmy Johns for lunch (it’s just SO good!) so I whipped up a batch of gazpacho for lunches this week. It’s so healthy and refreshing for the summer. Nice to have on hand.
Sunday night I needed a meal that could easily be split as 1/2 would be heading over to my parents down the road. These chicken parm meatballs are good for that. Served with M’s green beans and yummy rolls for possible sliders.
Monday night will be this perfect summer sandwich. It’s fun to serve sandwiches for dinner occasionally. They are typically reserved for lunch around here but this one is all dolled up and hearty enough to quality as dinner.
I’m doubling up on roasting the chicken for Monday nights dinner to easily make homemade chicken tostadas for Tuesday. Super easy.
Wednesday I have a trick up my sleeve for M. So, I’m going to keep quiet about this dinner – I’m quite excited!
I’m thinking a pasta dish for Thursday but let’s keep it light with the warmer temps. I’m going with a lemon pasta with grilled shrimp. Let’s throw in some roasted cherry tomatoes and perhaps spinach? Hmmm, still figuring this one out in my head. I’ll keep you posted.
Friday we will round out the week with our pizza.

I always end up holding A too. She’s a crazy lady and starts trying to stand up or jump out. Yikes.

I bought string beans at the farmers market, I’ll try your roasting method (if my husband has the air on!).
I have grilled chicken romaine salad, grilled pizza, and chicken wings on tap for this week – can’t remember what else at the moment!
I had Tyler try my chicken lemon orzo soup today – he gave it two thumbs up – I’ll be linking to the recipe tomorrow.

My 22 month old is the same way! We always start out good with him sitting in the cart, but after about 15 min, he’s over that and I have to tote him around the rest of the way. At least I don’t have to worry about getting in any arm lifts, he takes care of that for me!
Laughing, that’s exactly how I feel – it’s my workout!
Your recipes always look yummy, what are your go to cookbooks?! I am trying to purge and update my library. I seem to have way to many that I don’t cook from!
Thank you! I really draw inspiration from SO many places, cookbooks – blogs – magazines – family, etc. I vary, but right now I’m loving Dinner A Love Story and anything from Curtis Stone. I find myself turning to them over and over – they ‘get’ the lack of time a young family has to really cook. Online I turn to Real Simple and Bon Appetit.
I have the dinner a love story book and the Curtis stone and love both of them!
