It was a Monday and a good friend needed a dinner.
I had chicken parm meatballs on the menu, so it was easy to double up. Yet this particular friend was in need of a dinner accompanied with carbs. She’s just like that. I don’t know, must be the 20 miles she runs per week.
Anyways, after aimlessly wandering around Trader Joes with the boys it hit me. Adorable mini Parker House rolls – I would make chicken parmesan meatball sliders.
Oh my goodness were they good. And I’ll admit it – I liked them better with the carbs. This is a mini yet mighty sandwich you need to get in your dinner rotation ASAP.
The leftovers were a perfect at home lunch for M in his new office. So fun!
