As I’ve mentioned before, my husband travels from time to time. It seems to come in waves; he’ll be gone all the time and suddenly he’s home all the time. Both have their advantages – and disadvantages (ha) but the biggest advantage when he’s gone?
This. dinner.
You guys. You know that awesome gingery dressing you eat when you go out for Japanese? Well, this is like that but a million times better. And it packs a health punch as it’s loaded up with carrots, onions, celery, and of course, ginger.
All you need is some butter lettuce, sliced up radishes, grilled chicken, this ginger dressing, and a glass of rosé. Because, you know, come day 4 of your husband being MIA, the kids are driving you absolutely berserk. And that’s exactly when you book your pedicure upon his arrival home.

- 1/2 C ginger
- 1C carrot
- 2 C onion
- 1C celery
- 3/4 C rice vinegar
- 3/4C soy sauce
- 1 to 1.5 C vegetable oil
- splash of lemon juice and sesame oil optional
- Peel vegetables. Roughly cut up. Put vegetable into food processor or blender. Pulse them. Add liquids and pulse more until everything is mushy.
