Quick! Need a gorgeous side for dinner or a killer addition to a lovely antipasto platter, or just a nice snack to have around?
Well how pretty are these little carrots. Stunning, really.
Make sure you grab the tri-colored carrots, if your store offers them. The varying colors are so pretty! Simply chop up and toss with a few tablespoons of olive oil, a heaping tablespoon of honey, some chopped up fresh thyme, and salt and pepper. Roast away for 30 minutes in a 425 degree oven.
You just made your kitchen so much prettier. And oh how easy it was.
P.S. I ate the leftovers straight from the fridge – so good!

I love the idea of colored carrots but I’ve never seen them in my store. One year, I bought a mixed variety of seeds to grow but only a few came up purple. It was pretty weird eating them but they tasted totally normal.
