I feel like I tend to say this a lot around here: this recipe is SO and SO easy and generally healthy(ish). But seriously, you guys. This Mexican casserole IS so easy, so good, and healthy(ish).
It took me honestly all of ten minutes to throw together. I mixed everything in a bowl, got it in a casserole dish and baked away. You can make it even easier and do the mixing during the day and just bake whenever dinner is for you.
The healthy part comes from chicken, black beans, corn, cilantro, salsa. All good things. And get this, it even tastes creamy and ooey gooey bad for you. But the creaminess part? Wait for it………that comes from some greek yogurt. Shhhhh, don’t tell anyone that would be offended by that. They don’t need to know.
To be clear, mixed up with all the other ingredients, and of course cheese, there is no yogurt taste. Just a seriously good old fashioned comforting casserole taste. One serving size is a cup or so, which made me laugh because I probably had two. And then continued to eat straight up from the casserole dish after that. It’s fine.
Is it still healthy if your serving size is times three? Eh – I’m good either way.
HEALTHY MEXICAN CASSEROLE
Recipe from ALFS
INGREDINTS:
1 rotisserie chicken, shredded up
1 cup salsa (I used Fronterra)
1 1/2 cup mexican shredded cheese, divided
1 cup corn, (I used fresh but you can use frozen or even better roasted frozen from Trader Joes)
1/2 cup or so freshly chopped cilantro, plus more for garnishing
1 can black beans, drained and rinsed
3 TBS or so taco seasoning (I used low sodium to feel good about myself)
1/2 cup greek yogurt
tortilla chips, sliced avocado, jalapenos, etc for serving
DIRECTIONS:
Preheat oven to 350. Mix everything together in a large bowl (use only 1 cup of the cheese, the rest will be for topping later). Place in a greased casserole dish.
Bake for 20 minutes, top with more cheese, and bake for an additional 10. Serve with chips, more salsa, avocao, jalapenos – whatever you’d like!
Note, if you make this earlier in the day and bake straight from the fridge it may need a few more minutes. Enjoy!
