You guys. I have been so inspired by the strawberries in stores lately. Have you seen them? Especially at Trader Joes. They are glorious. Deep deep red and full of summer flavor. Exactly how a strawberry should be.
We can’t get enough around here and have been eating them raw, in salads, and most recently in the most beautiful and easy strawberry crisp.
Friends. This came together in minutes. Five, tops. You mix together a few ingredients with the berries. You mix together a few ingredients for the crisp oat topping and bam. Bake away.
Thirty five minutes or so later you’ve got the most wonderful thing in your kitchen: the promise of summer.
Now don’t forget the vanilla ice cream!
EASY STRAWBERRY CRISP
Recipe adapted from Julie’s Eat’s & Treats
INGREDIENTS FOR FILLING:
5 cups halved fresh strawberries
2 TBS fresh orange juice (I squeezed mine straight from an orange)
1/4 cup sugar
1/4 cup flour
INGREDIENTS FOR TOPPING:
2/3 cup oats
2/3 cup flour
1/4 cup light brown sugar
1/3 cup sugar
1/4 tsp salt
1/4 tsp cinnamon
1/2 cup unsalted butter, melted
vanilla ice cream, for serving
DIRECTIONS:
Preheat oven to 350 degrees and lightly grease a 9 inch or so pie dish or any similar sized baking dish.
Mix together filling ingredients and pour into greased dish.
Mix together topping and sprinkle over strawberry filling.
Bake for 35-40 minutes, or until the fruit is bubbling and the topping is golden brown. Serve warm with vanilla ice cream.
