Happy Sunday everyone! Hope you are enjoying a fun weekend and also getting some down time in to reset for the week ahead. Sundays are all about the menu plan, prepping food, working on the calendar and getting things in order. Well that, and kids and sports of course. Luckily for us we are in our ‘down season.’ It’s actually pretty spectacular. I know many families that are in complete hockey mode and, well, I’m sorry. That’s a lot. It’s all a lot! Hopefully a recipe or two can catch your eye here that will make this week just a tiny bit easier on you. Let’s do this!
Sunday we are off to our dearest friends (and intense hockey family!) the Langes home. I love Catherine so hard. Our two oldest boys brought us together nine years ago and now, we joke, are tearing us apart with opposing intense sports schedules. When one gets a bit more free post hockey, the other one ramps up with travel baseball. It’s not fair I tell you and we so miss the days of Friday baking with our tiny boys running around in their pajamas while we drank wine. Anyway, thanks for hosting us favorite friends. Please let me know what to bring.
Monday it’s back in my own kitchen with a soup since I won’t be making one Sunday. This Italian chicken noodle soup looks light and healthy! Perfect for Halloween Eve. And lunches for the week.
Ah yes, Halloween. We’ve got a lovely group of boys and parents trick or treating together and then it’s back to our home to feed them all. Haven’t fully decided on how to do just that. I’m leaning slow cooker Italian beef sandwiches (SO good and feeds a crowd) and a big pot of black bean soup (I’ve been eating this on Halloween since day one) bubbling away on the stove. Julie? You’re on salad and Mom? Let’s get some baked mac and cheese going, please.
That brings us to Wednesday. Didn’t get a chance to make these slow cooker Korean beef bowls last week and they are SO GOOD so back on the list for this week.
Garlic honey lime shrimp all sizzled up in a skillet? Sounds perfect for a Thursday along with some brown rice.
And that brings us to Friday. Can’t wait to test out this chipotle chicken skillet bake. It looks like pure magic. Olé!
