Welcome to another week of WWWW – that’s what WE wore Wednesday. This is a time to show off not only an outfit of yours but an outfit of your littles which as we all know, is much more fun to show off. Toronto Mama, (have you visited her blog? please say yes) love to see what you’ve got each week – thank you so much for linking up with us!

This week we visited a new fancy bakery that opened up nearby called Staci’s Cakes. Ummm…..LOVE! My favorite part aside from their homemade cinnamon rolls? Their light fixtures were in the shape of kitchen aid mixers! Completely clever. So, here is what we wore on our sweet tasting that my mom, of course, joined us at!

L: Vintage cubs tee I found at a resale shop along with crewcut shark shorts. Rainbow flip flops.

B: H&M plaid shorts, neon crewcut tee. Yes, my bebe can already fit into Crewcuts, no problem.

C: Gap cotton navy dress that I’ve had for 4+ years. I wore it a lot during pregnancy so was a bit sick of it but decided to give it at try again. I ended up having three people ask me where I got my dress! Rainbow flip flops and ray ban aviators – surprise surprise. Best accessory ever? Well that would be B.

B’s birthday party was a success – thank you to all who came out to celebrate the special day with us. We love you!

So obviously Sunday night I was spoiled with a delicious catered meal for the party complete with brisket, chicken vesuvio, grilled vegetables, chopped salad – etc. We ended the night with peach pie and to die for cupcakes. Delicious!

And then it was Monday. Ever since making this recipe I realized how much I missed standing over my stove and cooking in my red pot. I knew I had to make a soup this week – but it had to stay light since we are still in the summer months. My sister Allie brought me this soup after I had B and OMG was it amazing. Going to make a big pot of it this week.

Tuesday night let’s get back on our grill and enjoy this perfectly light and flavorful summer dish.

Wednesday will be another night of the soup. That’s the beauty of making a soup – love how it stretches!

This recipe was just so good that I just have to make it again on Thursday.

Friday we will end with our pizza. It just never gets old.

B’s peach pie.

So B turns one soon (Aug 6th). It seems like yesterday I had him, which every mother of course says. We are celebrating this weekend with close family and friends at a little pool bash and while I gave up cooking the meal for everyone I had dessert covered, hands down. What better to bake for my summer bebe than the epitome of summer desserts? Peach pie. And oh is this one a winner. Just like B.

I tested out the recipe a few weeks ago for my parents. B eyed me the whole time while I was baking it, slicing it, eating it – he just had to have some. And who could blame him? This is one heck of a recipe.

It started out as a brown bag apple pie but then my sister had the genius idea of changing up the fruit. Since there is no better fruit in summer than peaches, it all came together and I’m pretty sure B ate the majority of the pie. Ok, ok, B and myself ate the majority of the pie.

He’ll be getting an extra big slice on Sunday. Seriously, how is he 1?!?photo-49

What’s been missing.

Ok, ok – I know we’ve been a bit grill crazy over here lately. Ever since the new toy has arrived we just can’t get enough. And while it is more than satisfying to sear, smoke, and grill – there is just something, well, lacking around dinner time lately.

Until this recipe. It brought me back.

See everyone has there thing to unwind. Some run like crazy (hi Catherine & Kelly), others prefer excessive rounds of golf (hi Grandad, love that you read this), some sew beautiful dresses (hi Toronto Mama) and others play tennis as much as possible (hi, mom). Ross’s thing? That would be divorce. (Friends fans….anyone….?)

Obviously my thing would be cooking. During the summer I am still cooking, of course – but a lot of it is prepping for the grill. There isn’t a whole lot of dicing, sautéing, simmering, and browning which really, in my opinion, makes cooking feel like home. There is something about standing over my cutting board with my glass of wine and chopping away while B attempts to climb me. The olive oil in my red pot is getting nice and warm – ready to brown that sausage or chicken to give it a nice crunch. You can’t beat that color! Then in go the veggies to slowly soften and brown…the smell alone gets me, every time. Bonus that I get to use my wooden spoon. I really love that thing.

Well, this recipe has all of the above in spades. Plus it uses the freshest summer ingredients. Plus it’s one pot. Plus it’s healthy. Plus…well…it’s just about the perfect recipe to cook in the middle of the summer if what you miss is cooking.

Ingredients
  1. 3 links chorizo sausage (I used chicken), sliced into coins
  2. 2 tablespoons olive oil
  3. 6 or 7 boneless chicken thighs, salted and peppered
  4. 1/2 medium onion, chopped
  5. red pepper flakes (optional)
  6. 2 to 3 cups corn, cut off the cob
  7. 1 cup fresh peas (or frozen will do!)
  8. 1 cup cherry or grape tomatoes, halved
  9. basil, chopped
Instructions
  1. In a Dutch oven or large pot, brown sausage in olive oil over medium heat until crispy. Remove.
  2. Raise heat to medium-high and brown chicken (in batches if necessary) on both sides until mostly cooked through. Remove.
  3. Turn down heat to medium-low, add onion, salt, pepper, pepper flakes, and a little more oil if necessary. Stir until slightly wilted.
  4. Add corn, tomatoes, and peas and stir until vegetables release their juices.
  5. Nestle chicken and sausage back in the vegetables, cover and simmer another 5-10 minutes until chicken is cooked through.
  6. Serve with basil and crusty bread in bowls.
