MOM THESE ARE THE BEST THINGS YOU HAVE EVER MADE!
That would be my eleven year old talking, in a very serious tone I might add.
These started very simply: with the fear of summer and hearing ‘I’m hungry’ over and over and over again. I knew I needed a snack to whip up that was not only easy but also filling enough to give the boys energy to get back to running around in the yard or swimming in the pool.
Enter power bites.
This magic snack is filled with peanut butter, quick cooking oats, honey, and mini chocolate chips. That’s it. You mix them together in one large bowl, chill, and serve by the TBS every time someone is claiming to ‘die from hunger.’
Other moms commented they threw in some chia seeds or flax seeds to up the health factor even more. Smart, I like it. These are also gluten free if that is a concern in your household.
I’m on batch three now, and we are what – two weeks into summer? I say those numbers speak for themselves. We’ve had so many of the boys friends in and out of the home and they been a solid thumbs up all around. Score.
POWER BITES
Makes roughly 24
INGREDIENTS:
3/4 cup all natural peanut butter
1 3/4 old fashioned or quick oats
1/3 cup honey
1/3 cup mini chocolate chips
DIRECTIONS:
Microwave peanut butter in glass bowl just a bit to soften. Stir in remaining ingredients and chill for 30 minutes or so. Roll into TBS sized balls and serve. Store in the fridge.
