Another fun (and open!) summer weekend, yippee! We’re spending this one up at the Carani Lake Cottage. I know. Unreal.
So, let’s get to dinners for the upcoming week. I’m still taking the time to menu plan because, well, I would unravel if I didn’t. Who’s with me?
Sunday night we are still at the lake, so we’ll enjoy a family date night out here. Can’t wait!
On Monday it’s back to reality, i.e. football! That means tons of quick cooking dinners. Let’s start off with this fresh and flavorful chicken dish. I will be timing myself!
The essence of simple and elegant… this grown-up mac and cheese has got it going on. For L, I hold off on the pepper and stir in some fresh mozzarella along with the parmesan. For B, well, we’re still working on that.
This soup is light enough to make in August and bursting with flavor. I’ll be working on it on Wednesday during nap time so come dinner time, all that will be needed is to warm up and top with freshly shredded cheese and chopped cilantro.
That brings us to Thursday and the first day of school for my big third grader! Let’s go with something he’ll love. I relied on these grilled skirt steak fajitas a ton while our kitchen was down. It’s win with us, as the boys gobble up the steak!
Our Friday night will be spent at the high school for the football pep rally… game on! Wishing all Broncos and all flag teams the best of luck this season. I’m thinking we will hit up this spot after the cheering and festivities. Or maybe have a little party… Caranis? Are you in?
