If I’m going to put a birthday candle in something celebratory for M, it’s going to be this recipe.
He isn’t big on cake or cupcakes or ice cream. Don’t get me wrong, he’ll enjoy them, but when it comes down to it the best thing you can make him on his (33rd) birthday is a rockstar steak dinner. With a soft and fluffy baked potato with warm pads of butter sitting on top. And that’s what this is.
Watch and observe.
A perfect dinner to welcome his 33rd year as well as his send off to Puerto Rico. Now I get to revel in the fact that for the next 29 glorious days I am still in my twenties and he is 4 years older. That’s always fun to play with.
Flank Steak Roll Ups

I’m enjoying these laid back recipes…so, let’s do this:
Go to your favorite butcher and ask for a nice sized flank steak – enough for how ever many people you’re serving. Give him a nice smile and kindly ask to butterfly it open for you. It’s kind of a pain to do so it’s helpful to have a bit of assistance.
The stuffing is up to you. My go to is minced garlic, a bit of steak seasoning, fresh spinach leaves, sliced mushrooms, and shaved parmesan. Simply place it all on the meat then sloooowly roll up. Put tooth picks throughout to help hold it together and then slice into how ever many portions you’d like. Throw them (toothpicks and all) on a medium high grill for roughly 4-5 minutes per side.

What a lucky birthday boy!
We forgot about this recipe that we originally discovered a few years ago. Always a good idea to roll a steak around cheese, garlic, etc. A great bday surprise!
