A weekend of 80’s and sunshine in mid September? Yes, please! A wonderful reminder that summer is, most definitely, not over yet. I hope you are out enjoying every last drop. Sunday we are off to my mother in laws for a family dinner together. It’s been too long!
This one dish chicken bake caught my eye, can’t wait to test out Monday night. Couldn’t be easier.
Tuesday is a football night which means let’s get the slow cooker in rotation. I love lentils, they are so good for you and so delicious. They will be bubbling away all day in a lentil and spinach soup. Top with swirled olive oil, a little balsamic, and parmesan. YUM!
Wednesday night I can’t wait to test out this asian slaw with chicken and avocado. So colorful, light, and healthy – perfect for lunch leftovers.
Let’s get some pasta going Thursday night. I’m hoping this one pot taco pasta is a hit with all four of us.
Ah, Friday. Boys are exhausted after the school week so we have big plans of staying in, a movie, and some stuffed Italian sausage peppers. Perfect.
