Oh another lovely summer week ahead of us! Let’s get to planning quickly so we can enjoy all the outdoors is offering these days. Pool, sunshine….baseball. We are soaking it all up.
Tonight we are off to my mom’s to celebrate her and my sister’s (30th!) birthday. Can’t wait! Giving all the ladies the night off and having it catered by this delicious place. Locals, their southwest chicken and tortilla salad is to die for.
Monday we have a game which means a crock pot meal will be bubbling away on the counter all day. I’m trying to make some summer crock pot recipes as I feel so many lean fall/winter. Beer brats though? That screams summer! Can’t wait to try these out.
Tuesday night we have a much needed lull as the days ahead are jam packed with a dinner in the city for mom, M flying to Vegas for a bachelor party, and of course, baseball baseball baseball. I’m think this burrata and an antipasto platter on the patio with, obviously, wine is just what we’ll need to charge up for all the fun ahead.
As mentioned, Wednesday night mama is downtown for two very special birthdays. Can’t wait to celebrate! Can’t forget about the boys though so this cheesy crock pot tortellini will be ready when they are. (Or ‘noodles’ as B calls them while he requests them almost daily).
Back to reality Thursday night so a lazy night in with just the boys. They are gobbling up grilled chicken and corn lately, so, our favorite recipe will go on the grill.
And Friday. Another tournament begins in McHenry so mama is going to make herself a delicious caesar wrap to go. How good do these look…? Totally adding heirloom tomatoes to mine because….SUMMER!
