Alright everyone, a week in the balmy 20’s (and even cooler at times)? Hmmm. Doesn’t exactly sound like the sunshine and 80’s we were enjoying the past week in Florida but let’s make the best of it. Comfort food to stay warm and cozy but a healthy(ish) twist to stay….well, healthy! Who is ready to plan with me? I have a whole new line up and a grocery list ready to go, just for you. Let’s do this.
This chicken and roasted vegetable bake seems to have endless options. Veggies, spices, herbs, oh my. Can’t wait to try it out with my own little twist!
One of M’s 2016 goals was to eat healthier. (Who’s isn’t?) Hoping I can get away with this beauty for Monday night: roasted tomatoes, garlic sautéed spinach, all served over a creamy goat cheese polenta. Hold the meat.
Tuesday night sounds like the perfect night for a cozy bowl of chili. Can’t wait to try out this healthy and spicy one. Leftovers will be perfect for lunches later in the week.

Ok, ok, this probably isn’t the healthiest of recipes but hey, it’s french onion soup casserole! Hellooo. A respectable portion sitting next to a spinach salad totally works for a Thursday night.
And that brings us to Friday and to a celebration at my parents for my dad’s birthday, woohoo! Not sure what I’m slotted to bring, just yet, but hopefully my mom will let me help out.
