Sunday night we are getting together to celebrate my mother in law’s birthday. Can’t wait to see everyone! I’m in charge of potatoes so I’m making these roasted parmesan and herb skillet potatoes. I KNOW.

Wednesday night we’ll be at a baseball game which means my slow cooker to the rescue. This super healthy chicken verde looks soooo good. Perfect to warm up after being out in the cold for hours.
