And then there are life changing recipes.
And this is one of them, my friends.
Grilled bacon ranch cheddar potatoes. Come ON.
It’s like a combination that doesn’t even seem fair. Or real. But it is, oh but it is. Not only are they heavenly to eat (I had three portions) but they are so easy to prep! Then all you have to do is throw them on the grill next to your favorite meat, we went with our go to grilled chicken.
When you peel back the double layer of foil what you have is gooey cheesy potatoes. Soft in all the right spots, and a bit crisp in other spots as well. Texture on point and oh so flavorful from the ranch dressing and bacon. All that’s left is to top with some freshly chopped parsley and bam, you’ve got yourself the side of the summer!
GRILLED BACON RANCH CHEDDAR POTATOES
Recipe from ALFS
1 1/2 lbs of potatoes, I used Yukon gold
1/3 cup Ranch dressing (any kind works, and you can use light to lighten things up)
4 slices of bacon cooked and crumbled
1/4 cup shredded cheddar or Colby Jack cheese, plus more for topping
2 tablespoons fresh parsley chopped finely, plus more for topping
1/2 teaspoon salt
pepper to taste
cooking spray for greasing
Preheat grill to medium heat.
Scrub and slice potatoes. (I use a mandoline for an even slice.)
Prepare foil. Use heavy duty foil if you have it. Otherwise, use a double layer. Cut off a piece large enough to fold over potatoes on all sides. Spray evenly with non-stick cooking spray.
Mix potatoes with ranch dressing. Layer on foil. Top with bacon, shredded cheese, salt, pepper, and parsley.
With heat on medium, grill for about 15 minutes. Flip over and grill for another 15-20 minutes or until potatoes are fork tender.
