Did you read the meatloaf post below? If not, I highly suggest you check it out. Not only does it produce a comfort meal like no other but it’ll give you the best leftovers of your life.
First, let’s take a night off from meatloaf. Might I suggest this metabolism burning soup or this lightened up chicken parm? Either will be a great balance to what you’ll be cooking up in a night.
Ok – back to what we’ve been waiting for. Take your cold meat loaf and thinly slice it. Assemble a grilled cheese how you normally would (everyone does it differently). I like to stick with thick white bread and really good sharp cheddar. Throw in a few slices of your meat loaf and grill away in a skillet until browned and bubbly.
