It’s Sunday morning and that means I’m sitting down with a strong cup of coffee and my planner, and I’m working out my menu plan for the week. Who’s with me? Seriously, 20 minutes is all it takes to get a head start on the week. Let’s do this!
Yesterday was M’s birthday, so we are continuing the celebration with family on Sunday night. The birthday boy has requested a classic American summer meal, so we’re going with burgers on the green egg, this grilled corn salad, and big bowls of watermelon and summer berries.
Then for Monday through Thursday, we are back to football from 6:00 – 8:15, i.e. dinner gets… challenging. Here’s how I’m breaking it down, play by play.
To start the week, I will make a big batch of mini sliders. These are mainly for L as a hearty snack around 5:00 because it’s hard to get through 2 hours and 15 minutes of football without one. I’ve been known to snack on one as well! I mix up lean ground beef with this seasoning. We like ours topped with sharp cheddar on mini Hawaiian rolls.
Alright, that keeps us from fainting on the football field. What about post-football? Here are some dinners that come together in a flash. I’m talking 10-15 minutes, assuming you prep ahead.
On Monday, the veggies and chicken will be chopped ahead of time for this one. Heck, my skillet will even be setting out on the stove with the proper spices just waiting to be used. Dinner in 10 minutes, easy.
Hearty sandwiches are perfect for coming together in a snap. We’ll be munching away on grilled caprese ones on Tuesday night.
Crock pots are a busy mom’s best friend. This Ropa Vieja recipe is one of my mom’s ALFS favorites. We’ll be enjoying it over brown rice on Wednesday night.
Love, love, love these homemade chicken tostadas! I will roast the chicken earlier in the day so upon getting home, it’s just a matter of warming the beans, chicken, and cheese in the oven. Top with fresh cilantro and chopped tomato.
And that brings us to Friday and after a full week of cooking, a night off is in order.
