Yee haw! After a week in the mountains with great friends and family, we are home and that means it’s time to get back to work in the kitchen. Just when I thought dinners would get easier with baseball ending, guess what we have for the next two weeks from 6:00-8:15pm? Yep, football has begun. Dinners get tricky, but I refuse to give up. Here is what we’ll be chowing down on this week:
On Sunday night we are wide open, which means some serious cooking is in order. I can already imagine how insane my home is going to smell while cooking these picnic burritos.
Hearty sandwiches work great and come together quickly post sports. We are totally in love with these summer ones for Monday night.
For Tuesday night, let’s go with leftover picnic burritos all wrapped up. Easy and portable to eat at the park while watching the football studs.
These pulled buffalo chicken sliders simmer away all day and are ready to go when we are. Yum!
Let’s try a new sandwich on Thursday night. This bacon guacamole grilled cheese smeared with cheddar, avocado, and bacon looks pretty. darn. good.
And that brings us to Friday and let’s go with the usual – our pizza.

That all sounds delish! I am headed home today too – boo! Glad you had an awesome vacation
No where near as organized as you, but with a big haul from the CSA we’re doing a lot of veggies. Last night sautéed yellow and green squash w/plenty of garlic and diced tomatoes served over spinach paperdelle. Leftovers frozen
Tonight doing a shredded cabbage pad thai with whatever fish looks good.
Tomorrow stuff eggplant with veggie “beef” crumbles and veggies and raw cheese on top.
And that’s it for what I’m cooking. Dinner out on Thursday and Friday and who knows what for Saturday.
Oh the veggies over spinach pasta sounds awesome!!
