Another Monday, another meal prep post! In case you missed the start to the series, I’m working up recipes that are great to have at lunch through the week, or grab for an easy dinner on the go, or munch on while at a baseball field. Any and all options work! Meal prepping isn’t just for those in an office 9-5. Lots of benefits to getting some healthy fresh food stocked in your fridge to be easily available. We’ve had greek chicken bowls, detox Moroccan spiced bowls, and more!
This week is all about the summer go to: zucchini! It’s in abundance everywhere so why not use it up? So many stores now sell it in a spiralized version, huge bonus if you don’t own your own (I do not). Tossing it together with a few fresh ingredients and you’ve yourself one healthy salad.
Yet if you’re anything like me, you’re going to need a little more to get you to dinner time. (Otherwise the chips and hummus come out around 3:00 amiright?) This salad pairs awesome with leftover grilled chicken or sausage (summer lesson learned: always cook more than you need). Or, a great go to lately that I’ve completely fallen for is Costco’s pre grilled mediterranean chicken skewers. Boys love them. I love them. They are awesome and located right near the cheese and meat area across from the wine spot. And obviously you know where that is.
Prep the zucchini noodle salad in a bowl and top with a skewer or two and congrats! You have a seriously healthy and satisfying meal on your hand. You so rock.
Psst – don’t forget! This doesn’t have to be meal prep. You can simply serve this in a big bowl right at your next barbecue!
Zucchini Noodle Salad
Recipe from ALFS
Ingredients:
4 cups spiralized zucchini
Handful cherry tomatoes, halved
10 oz feta cheese
squeeze of a lemon
few TBS olive oil
salt & pepper
Directions:
Place zucchini in a large bowl and gently toss with the tomatoes and feta. Squeeze in the lemon, olive oil, salt & pepper and gently toss again. Enjoy!
