My goodness do I just love summer cooking. The ease of it all is just so relaxing, don’t you think? So many dishes come together with such minimal, fresh ingredients.
Take these grilled tomato, basil, and mozzarella pizzas for example.
Those ingredients pretty much sum up the list. Throw in the naan bread and a good balsamic glaze and you’ve got yourself an easy summer meal with only five, yep count them, five ingredients.
Slice it up, pour yourself a glass of chilled wine, and dinner is ready on the patio! Who’s coming by?
Grilled Tomato, Basil, & Mozzarella Pizzas
Recipe from ALFS
Ingredients:
Naan pita bread (I used the Stonefire Authentic brand, garlic version. Use as many as you want to make, I used 4 for two people)
Pint cherry tomatoes, halved
Handful of fresh basil, chopped up
Mozzarella balls, one container should be good for four pitas
Balsamic glaze (you can make your own, or buy store bought)
salt & pepper
olive oil
Directions:
Preheat a grill to medium heat. Rub a little olive oil on the front and back of the naan bread.
In a large bowl, mix together the tomatoes, basil, and mozzarella. Season up with some salt & pepper and a drizzle of olive oil.
Bring the naan bread and the tomato bowl out to the grill. Place the naan bread upside down on the grill for two minutes or so to warm up just a bit. Flip, and place your toppings on top. (You can remove the bread and do this on the side of it’s too warm and then just slide them back on). Close the grill to toast up the naan and melt the cheese and warm the tomatoes. This will take roughly 5 minutes or so. Keep an eye on the bottoms, as you don’t want them to burn.
Before serving, drizzle with more olive oil and the balsamic glaze. Enjoy!
