Alright friends, a short week with the holiday but we are still cooking none the less. And I know many of you are cooking TONS for the Thanksgiving holiday. I am fortunate enough to take this holiday off year after year as we are heading to my moms for her full course incredible meal. I’ll be armed with a salad and pumpkin pie. Can’t show up empty handed!
That being said, we still have a few days before all the festivities begin. That means it’s time to plan, just a few minutes and just a few meals. A short week – a short menu plan. Let’s do this!
Sunday night sounds like a good evening to lay low, enjoy the Christmas decorations (yes we put them up a week early), and munch away on some sheet pan nachos. Perfect.
Let’s get a slow cooker dish going for Monday night. This Moroccan chicken dish looks so incredibly easy and yet full of a crazy amount of flavor. Served over cauliflower rice, perfect to offset the Thanksgiving feast that is to come.
Tuesday night let’s keep the boys happy with a sausage pasta dish. I’m assuming it will be a hit all around.
What do you eat the night before Thanksgiving? Well, you eat a soup that literally burns fat. Somehow I’ve gotten away with serving this to M year after year and he actually eats it! Maybe it has something to do with the parmesan topping and plenty of bread for dipping. I skip this part…… for just this one meal.
And that brings us to Thanksgiving. I hope everyone has an absolutely wonderful holiday with their family and friends. If you’re looking for the perfect dish to simmer away on your stove with all that leftover turkey, this soup is absolutely killer and totally healthy. Just what the DR ordered, am I right?
