Happy Father’s Day everyone! Hope you have lots of fun in the sun and bbq’s planned with those special guys in your life. They are the best, right? L and B don’t know how good the have it. And neither do I!
Now let’s get down to planning because it only takes a few minutes to get yourself set for the week. I have another delicious line up for you, I hope you find something that can work for your family.
Sunday night we are off to my mom’s for a Father’s Day BBQ. I’m in charge of a side and salad. I’m think this delicious rice dish (and oldie but goodie!) would work great with her plans to grill kabobs. Also thinking a nice spinach salad with red onion, strawberries, avocados, and almonds. Yum.
Monday night is baseball practice so the slow cooker to the rescue! Can’t wait to test out these carnitas. I’ll be serving mine wrapped up in tortillas with plenty of salsa.
Tuesday night is a tournament night so another slow cooker dish to test out. This creamy sun dried tomato chicken looks SO GOOD. I hope it’s a hit with the boys.
We haven’t had pasta in awhile. Let’s change that Wednesday night with a classic go to: cacio e pepe. Hold the pepper for the littler ones.
Love love love my normal caprese chicken. Adding avocado to it? Genius, and perfect for a Thursday night at home.
