How is everyone’s weekend going? I so hope well. We’ve had some baseball games, way too much fun, and now we get to celebrate Father’s Day! Yippee! Isn’t summer the best?
Taking a few moments this morning to plan out my week and our meals. It makes Monday so much less painful, I promise you that. Hopefully a recipe or two catches your eye for your own family. Let’s go.
Sunday we are going to be spending lots of time at the pool with my Dad and the boys and will end on grilled dinner on the patio at our club. So fun!
Monday I’m on my own and that means I will eat anything I want and anything is salmon power bowls. Have you tried these? So beautiful. So healthy. So delicious.
Tuesday night we are back on the baseball field and these slow cooker chicken burrito bowls will be waiting for us whenever we’re able to eat. An old standby in our home.
Wednesday let’s chill at home, fire up the grill, and get some naan pizzas going. I’ve got a bunch of peaches to use up fresh from Costco and they could not be more delicious on the grill and then topped on pizza with prosciutto. Unreal.
That brings us to Thursday and to a super easy summer dinner. Grilled sausages and homemade caprese garlic bread. Does it get any better?
Ahhhh Friday. The even before we are off to South Carolina, yippee! We also have baseball, I think. Going to get this roasted summer veggie and feta quinoa bake going in the am and dig in whenever dinner time may be.
