Happy Sunday morning! I so hope you’ve had a good weekend so far. We have almost made it to the end of February my friends, yippee!
Alright, let’s get to planning here. I’ve got a brand new kitchen line up for you this week. I hope you can find something that sounds good for your own family. Let’s do this!
Sunday we are having lovely friends over for dinner. I’m trying a homemade pork ragu, where you literally bake the ribs in the oven in herbs and wine and tomatoes and all that lovely stuff that yields the most flavorful and rich sauce ever. I’ll be serving it over pappardelle pasta and a nice light spinach salad on the side. I’ve gotten lots of questions lately over my favorite salad dressing recipe, and you can find that right here.
OK, moving onto Monday. Let’s lighten things up, shall we? I’ve never made a plain old classic homemade vegetable soup before. Let’s give this one a try.
I tested out these enchiladas last week and OMG we have to have them again. Like every week again. Unreal.
Wednesday is baseball which means always a great night for a slow cooker. We love this chicken tikki masala, and keep it light by serving over cauliflower rice.
Thursday let’s give a baked tortellini recipe a try. All tossed up with pine nuts, parmesan, and kale pesto? Sounds pretty good.
And that brings us to the end of the week. An oldie but a goodie. His & hers pizza.
