Ah, Sunday. Easter Sunday in fact. I hope everyone has a wonderful day celebrating the holiday with family and friends. I’m hosting this year and can’t wait to have my family by. In the meantime though, I’m sitting down for a good twenty minutes or so to get myself organized for the week ahead. To do lists, menu plan, appointments and more. Makes Monday that much easier, I promise. And now, without further ado, let’s get to the food!
Today as I said above I’m hosting Easter. Honey baked ham, roasted asparagus, hard boiled eggs, all the good stuff. And no brunch with would complete without a breakfast casserole. YUM!
I never got around to trying this slow cooker thai chicken soup so going to give that a go Monday night.
Oh my these sausage and veggie foil packs look so good for the grill. Can’t wait to test out! Thinking some smashed potatoes on the side.
Wednesday night we are at a game which means we’ll be coming home to our sweet and spicy baseball thighs. Served over rice for the guys and as lettuce wraps for mom.
Cooking club Thursday – YIPPEE! Our theme is Mexican so I’m going all out with homemade queso fundido. YES PLEASE. Can’t wait to have everyone together.
That brings us to Friday. A cozy homemade meal of mozzarella chicken in tomato sauce with a glass of pinot noir couldn’t sound better.
