Oh this magical March cooking. Typically around here we are still in soup and stew mood but with this lovely weather let’s keep things nice and light and (gasp!) on the grill. Who is with me?
Sunday night sounds perfect for some homemade turkey burgers on the grill. My favorite way to serve this is topped with a slice of gouda and avocado (no bun). Sweet potato fries on the side because, obviously, they are totally healthy.
Another light and grilled dish, this one is an oldie but goodie. Grilled shrimped and asparagus. You toss it all together with olive, lemon, shallots, and a little parm. Heavenly on a Monday night.
Tuesday is always a good night for a soup as we are getting L to baseball at dinner time. I’ll be making this nice and light one during nap.
I am drooling, drooling, over this one skillet mediterranean dish. The flavors look incredible. Can’t wait to try it out Wednesday!
Let’s get a some red meat in this week, I swear I crave the iron every once in a while. This skirt steak and sauce is absolutely delicious on the grill.
And that brings us to Friday and a date night out with family – can’t wait!
