I am quite happy today.
My boys come home. Goodness it’s felt like a long time that they have been gone. I wasn’t really a fan of that.
Sure I’ve had my fill of bad TV, veggie stir frys, and setting my own schedule (well, as much as you can set your own schedule while still being mindful of a 6 month old’s needs). Yet none of that was as good as the noise and occasional chaos those other two members of the family provide. Yee HAW they’re coming home!
I’m not sure about you, but one of the things that is most depressing about coming home after a vacation is an empty refrigerator. It’s just…sad. Lucky for M and L though, I am here to take care of that. Barbacoa beef will be simmering away in the crock pot, cowboy cake is on the counter, and someone’s favorite beer, Matilda, is stocked in the fridge. Don’t worry, it’s not L’s.
Not bad, right? Hey, I’m not having them want to fly away again any time soon. Have to pull out all the stops and cowboy cake does just that. It’s a large, hearty, and comforting cake. It means business, no fussiness here. Melt stuff in a bowl, mix together, and you’re good to go herd some cattle – er – catch up on your white collar job or head off to kindergarten.
- 2 cups sugar
- 2 cups flour
- 1 cup margarine
- 1/4 cup cocoa
- 1 cup water
- 1/2 cup sour cream
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- 1/4 cup cocoa
- 1/2 cup margarine
- 6 TBS milk
- 1 lbs powdered sugar
- 1 tsp vanilla
- 1 cup chopped nuts, optional
- Preheat oven to 400 degrees.
- Sift flour and sugar together. Melt margarine, cocoa, and water over the stove. Bring to a boil. Pour over sugar and flour, mixing well. Add in your remaining ingredients and pour into a greased jellyroll pan. Bake for 20 minutes.
- Combine cocoa, margarine and milk in a pan over the stove. Melt and bring to a boil. Remove from the heat and add remanding ingredients, beating well.
- Pour over the cake and smooth out with a knife.
The gold moose is a bonus, of course.
