I don’t know about you, but with November just around the corner I’ve become completely obsessed – it’s holiday time! Yippee! It’s going to get pretty festive around here, I hope that’s OK. If you follow me on Instagram (thank you!), you know I made these a little while back. So. Gorgeous. And festive, right? You can make them even more “holiday” by using all spinach tortellini which, by the way, is the only cooking required with these. Everything else you just spear on.
I went with cherry tomatoes, garlic stuffed olives, a mix of prosciutto and salami, and of course marinated mozzarella cheese.
Place on a big platter and right before serving sprinkle with some freshly minced oregano and pour on a drizzle of olive oil. So so merry, all the way.
