‘Confetti Corn’ – serves 6
Recipe adapted from Ina Garten
Cut the corn off the cobb of 5 ears of corn.
Saute 1/2 minced red onion in 2 TBS olive oil over medium heat until soft. Throw in a diced orange pepper and saute for 2 more minutes.
Add in the corn and 1 TBS butter and season with salt & pepper. Saute for 5 minutes. In the end, throw in some freshly minced herbs – chives, parsley, basil…whatever you have on hand.
