Scrambling for a thoughtful father’s day idea? Look no further. Dads, (and grandpas!) love these.

My mom came upon this ‘special oatmeal cookie’ recipe some time ago and it has been my dad’s favorite ever since. It’s quite different than your typical oatmeal cookie. It’s super light and airy but also slightly crispy around the edges. For those of you who eat cookies for breakfast (wink wink Catherine) they are made for coffee dunking.

It’s also just happens to be the perfect cookie to help erase your dad’s memory of your behavior between ages 13 – 18…no wait, 19….hmmm, let’s say 25 just to be safe.

Happy Father’s Day!

‘Special Oatmeal Cookie’

Ingredients:

- 1 stick margarine, softened
- 1 stick butter, softened
- 1/2 cup sugar
- 1 cup flour
- 1 1/2 cup quick cooking oats
- dash of salt
- 1 tsp vanilla
- powdered sugar, for dusting

Directions:

Preheat oven to 350 degrees. Mix all ingredients together. Drop by the TBS onto an ungreased cookie sheet. Flatten with a fork and bake for 20 minutes. Sprinkle with powdered sugar while cookie is still warm.

What an easy way to put a smile on your dad’s face!

    Thank you for another great cookie! These were great and easy to make, and truly taste like heaven, better yet the next day as you mention dunked in coffee and I’m not even a Dunker!

    I need to post an update on these: my good friend Catherine made these Saturday afternoon for her husband and some friends and had a genius idea – dip half of them in chocolate. Not only does it give the cookie a beautiful look but it takes it to the next level for chocolate lovers. She was kind enough to drop one off at my office today and I gobbled it up – SO good!!

    After too long of a hiatus- I’m back!!!
    Although its fathers day and my dads favorite cookie is peanut butter, I went with your dads- it looked awesome and easy all at the same time! Just what I needed to transition back to the kitchen :)
    The cookie is great. Light and airy as promised. Sweet, but not overly so!
