Gobble gobble! Can you believe it’s Thanksgiving week? I’m sort of in denial but also super excited for the holidays to officially begin! Let’s keep things light leading up to Thanksgiving, shall we? Dear Lord, I’m back in a swim suit on the beach Friday.
Sunday is our official deck the halls – er – home day! One of my favorite days of the year. Let’s end it by munching on slices of chicken tortilla pie. This recipes goes way back and is on of our favorites.
This tuscan minestrone soup tastes like it’s been simmering away in grandma’s kitchen for days. Reality? It comes together in about 20 minutes and it’s so good even the husband doesn’t ask ‘where is the meat?’
Tuesday let’s go with a delicious cheesy chicken pot pie. Love one dish dinners.
And that brings us to Thanksgiving Eve. Honestly, what do you eat the night before Thanksgiving? I’m thinking a super light and healthy french lentil & chicken soup.
And that brings us to Thursday and we are off to my in-laws! I’ve got two apple pies on order from here,my pecan bars will be in the works, and we were told to also pack a football. Done.
With still full bellies I’m sure, Friday morning we take off to Florida. Time for a little warm up and fun in the sun.

Have so much fun in Florida! I love how our holidays are extended with a quick jaunt to Indiana the weekend prior to Turkey Day. I’ll take family and food I didn’t have to cook any day! This work-week should fly by and then it’s four days of FUN! Thanksgiving, Shrimp Boil, and then Christmas decorating!! Hooty Hoo!
